4 ounces cold butter
3 ounces caster sugar
1 egg , separated
7 ounces plain flour
1/2 teaspoon ground allspice
2 2 ounces raisins or 2 ounces sultanas
1 tablespoon citrus peel , chopped
2 tablespoons brandy
caster sugar ( for sprinkling )

Instructions

1.In a bowl, mix the cold butter, flour, caster sugar, and allspice until it crumbles.
2.Add the egg yolk and 1 tbsp water. Mix quickly to make a dough, then wrap in cling film.
3.Chill the dough for at least 30 mins.
4.Preheat the oven to 180C/160C fan/gas 4. Line a baking sheet with baking parchment.
5.Roll out the dough to around 5mm thick, then cut out the Easter shapes, using the cookie cutter of your choice.
6.Place the cookies on the baking sheet.
7.Beat the egg white with 1 tsp water, then brush it over the tops of the cookies.
8.Sprinkle the raisins or sultanas, and citrus peel over the cookies.
9.Sprinkle caster sugar generously over each cookie. Bake for 12-15 minutes, until golden brown.
