1 tablespoon brown mustard seeds

1 fresh jalapeno , minced
12 ounces small red potatoes , quartered
1 teaspoon salt , to taste
1 cup water
1 lime , juice of
1 cup frozen peas
2 tablespoons currants or 2 tablespoons raisins
1/2 cup chopped parsley or 1/2 cup cilantro
1 package whole wheat flour tortillas or ( 10 count ) package white flour tortillas
3 cups cooked rice
nonfat sour cream ( optional )

Instructions

1.In a large pan, add saute liquid of your choice (water or oil) and heat over medium-high heat.
2.Add the brown mustard seeds, ground cumin, and ground turmeric and stir until fragrant.
3.Stir in the sliced onion and minced jalapeno and cook until the onion is soft and translucent.
4.Add the quartered potatoes and salt to taste, then stir to coat the potatoes in the spice mixture.
5.Pour in 1 cup of water, cover the pan, and reduce the heat to medium-low. Cook until the potatoes are tender, about 20 minutes.
6.Remove the lid and stir in the lime juice, frozen peas, currants or raisins, and chopped parsley or cilantro. Cook until the peas are warmed through, about 5 minutes.
7.Warm tortillas in the microwave or on a heated pan over medium heat.
8.To assemble the wraps, place a spoonful of rice in the center of each tortilla, then top with the potato mixture. Add a dollop of nonfat sour cream if desired, then wrap the tortilla around the filling and serve immediately.
