Tagine is a traditional Moroccan dish that is named after the clay pot it is cooked in. It's a slow-cooked stew that typically includes meat, vegetables, and aromatic spices. This recipe, however, is the easiest chicken tagine you'll ever make and it only requires a few basic ingredients that you probably already have in your pantry. The chicken is baked in the oven with a spice mix that includes saffron, turmeric, ginger, cumin, and cinnamon, and cooked in chicken stock until it's tender and juicy. The result is an aromatic and flavorful chicken that pairs well with couscous, rice, or bread. This recipe is perfect for meal prep or busy weeknights when you want something comforting and delicious with minimal effort.

Instructions

.Preheat your oven to 375°F (190°C).
.Rinse and dry the chicken portions.
.In a separate bowl, mix together the saffron, turmeric, ginger, cumin, and cinnamon.
.Heat up oil in a tagine dish or a large oven-proof pot over medium-high heat.
.Fry the onion in the pot, stirring occasionally, until it starts to become translucent, about 5 minutes.
.Add the chicken portions to the pot and brown them on all sides, about 5-7 minutes.
.Once the chicken is browned, sprinkle the spice mix over the chicken, and mix well until the chicken is evenly coated.
.Pour chicken stock into the pot until it almost covers the chicken. Bring to a boil.
.Once boiling, transfer the pot to the oven and bake, uncovered, for 45-50 minutes, or until the chicken is cooked through.
.Serve hot and enjoy!
