8 ounces cream cheese , room temperature | |
1/3 cup sugar | |
2 extra-large egg yolks , room temperature | |
2 tablespoons ricotta cheese | |
1 teaspoon pure vanilla extract | |
1/4 teaspoon salt | |
1 tablespoon grated lemon zest | |
1 box frozen puff pastry , defrosted | |
1 egg beaten with 1 tablespoon water , for egg wash |
1. | Preheat the oven to 400°F (200°C). |
2. | In a mixer, beat the cream cheese and sugar together on medium-high speed until light and fluffy. |
3. | Add the egg yolks, ricotta cheese, vanilla extract, salt, lemon zest and mix until smooth. |
4. | Unfold the puff pastry on a lightly floured board and roll it slightly with a floured rolling pin until it's a 10-inch (25cm) square. Cut the square in quarters. |
5. | Place a heaping tablespoon of cheese filling into the middle of each of the 4 pastry squares* |
6. | Brush the border with egg wash and fold diagonally to make a triangle, pressing edges together firmly with a fork* |
7. | Brush the top with egg wash. |
8. | Bake for 15 to 20 minutes, until puffed and golden brown. Serve warm. *Repeat with remaining dough and filling (you should have 8 Danishes). |
