Ingredients

2 packages dry enchilada mix ( I prefer Lawrys )
1 can tomato sauce ( Large Can )
1 can tomato puree ( Large Can )
1 can diced tomatoes ( Large Can )
1 can crushed tomatoes ( Large Can )
2 lbs hamburger
3 lbs shredded cheese ( Kraft Mexican )
1 onion ( diced )
1 green pepper ( diced )
1 package medium size flour tortilla
2 teaspoons salt
1 tablespoon pepper
1 cup water

Instructions

1.Preheat your oven to 350 degrees F.
2.Brown the hamburger in a large skillet. Add diced onion and green pepper and cook until vegetables are tender.

4.In a separate bowl mix together tomato sauce, tomato puree, diced tomatoes, and crushed tomatoes.

6.Pour the tomato mixture over the top of the enchiladas. Make sure it's spread out evenly.
7.Cover the dish with a layer of shredded cheese.
8.Bake in the preheated oven for 30 to 45 minutes, until cheese is melted and bubbly. Let cool for 10 minutes before serving.
