Ingredients

160 g butter
1/2 teaspoon salt
1 egg
400 g flour
300 g brown sugar
50 g ground almonds
4 -6 tablespoons milk
1 teaspoon ground cinnamon
1/2 teaspoon cardamom
1/2 teaspoon mace
1/2 teaspoon ground cloves
milk , for glaze
The Dutch Speculaas Cookies, also known as Dutch Windmill Cookies, are a delicious and aromatic cookie that's popular in the Netherlands. These cookies have a crunchy texture with a sweet and spicy taste that comes from a blend of cinnamon, mace, and cardamom. Instructions

1.In a large bowl, mix together the butter, brown sugar, and salt until creamy.
2.Add in the egg and mix until well combined.
3.Add in the flour, ground almonds, cinnamon, cardamom, mace, and cloves, and mix until the dough forms. If the dough looks dry, add in the milk one tablespoon at a time.
4.Divide the dough into 4 portions and roll each portion into a log shape. Wrap in plastic and let chill for at least 2 hours.
5.Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
6.Remove the dough from the fridge and slice into rounds about 1/2 cm thick. Place onto the baking sheet about 2cm apart.
7.Brush with milk to create a shiny glaze.
8.Bake for about 15-20 minutes or until golden brown.
9.Remove from the oven and let cool on a wire rack.
