Ingredients

1 lb extra-large shrimp , peeled and deveined
salt and pepper
olive oil
2 tablespoons garlic , minced
1 lb boneless skinless chicken thighs , trimmed of excess fat and halved crosswise
1 red bell pepper , seeded and cut pole to pole into 1/2-inch-wide strips
8 ounces chorizo sausage , Spanish sliced 1/2 inch thick on the bias
1 medium onion , chopped fine ( about 1 cup )
1 can diced tomatoes , drained , minced , and drained again
2 cups rice , Valencia or 2 cups arborio rice
3 cups low sodium chicken broth
2/3 cup dry white wine
1/2 teaspoon saffron thread , crumbled
1 bay leaf
1 dozen mussels , scrubbed and debearded
1/2 cup frozen green pea , thawed
2 teaspoons fresh parsley leaves , chopped
1 lemon , cut into wedges , for serving

Instructions

1.Preheat oven to 350°F.
2.Place 8-10 qt Dutch oven over medium-high heat and add 1 tbsp olive oil.
3.Season shrimp with salt and pepper and sauté until just cooked through. Remove from pan.
4.Add another 1 tbsp olive oil, garlic, and chicken. Sauté until browned and cooked through. Remove from pan.
5.Add remaining 1 tbsp olive oil, bell pepper, chorizo, and onion. Sauté until vegetables are soft.
6.Stir in tomatoes, rice, chicken broth, white wine, saffron, and bay leaf.
7.Bring mixture to a boil then reduce heat to medium low. Cover Dutch oven and cook until rice is tender, about 20 minutes.
8.Remove cover and add mussels and peas on top. Cover and cook until mussels open, about 5-7 minutes.
9.Stir in cooked shrimp and chicken. Serve with parsley and lemon wedges.
