Ingredients

600 g fresh veal ( or use left-over chicken or turkey , 1lb 5oz ) or 600 g beef ( or use left-over chicken or turkey , 1lb 5oz )
salt and pepper
75 g butter
1 tablespoon vegetable oil
1/2 cup white wine
1 small onion , finely chopped
1 clove
2 bay leaves
1/4 teaspoon ground nutmeg or 1/4 teaspoon mace
2 sprigs parsley , finely chopped
3/4 teaspoon thyme
2 teaspoons lemon zest ( or a squeeze of lemon juice )
2 cups water ( or chicken stock )
40 g all-purpose flour
cornstarch
3 eggs , separated into yolks and whites
4 cups fine breadcrumbs ( beschuit ) or 4 cups crushed dutch rusks ( beschuit )
vegetable oil , to deep-fry

Instructions

1.If using fresh meat, season with salt and pepper. If using leftover chicken or turkey, shred and set aside.
2.In a large pot, melt butter and add vegetable oil. Add finely chopped onion and sauté until translucent. Add wine, clove, bay leaves, nutmeg or mace, parsley, thyme, and lemon zest or juice. Add water or chicken stock and bring to a boil.
3.Gradually add flour while stirring continuously. Stir in fresh meat (if using), or shredded leftover chicken or turkey. Cook until the meat is heated through and the mixture is thickened.
4.Let the mixture cool and form small croquettes. Set aside.
5.Beat egg whites until they form stiff peaks. Dip each croquette in cornstarch, then egg whites, then breadcrumbs. Repeat until all croquettes are coated.
6.In a deep fryer, fry the croquettes until golden brown, about 3-5 minutes. Serve hot.
