1 1/4 lbs rib eye steaks ( boned & cut into 1/2-in cubes , SEE NOTE below for other cuts of meat that may be used )

1 tablespoon olive oil
4 large onions ( quartered )
1 large garlic clove ( finely chopped )
2 ounces flour
2 slices gingerbread ( firm-textured gingerbread , thick-sliced & cut into 1/2-in cubes )
2 cloves
2 bay leaves
1/2 teaspoon basil
1/4 teaspoon ground cumin
2 pints beef stock
1 tablespoon tomato puree or 1 tablespoon tomato paste
1 tablespoon red wine
1 tablespoon vinegar
Worcestershire sauce ( optional )
Tabasco sauce ( optional )

Instructions

1.Preheat the oven to 300°F.
2.Season the beef with salt and pepper in a bowl.
3.In a pan, heat 2 ounces of butter and 1 tablespoon of olive oil over medium heat. Add the onions and garlic and cook until they are soft.
4.Transfer the onion mixture to a 3-quart casserole dish. Add cubed meat and sprinkle with flour. Stir to combine. Add gingerbread, cloves, bay leaves, basil, ground cumin, beef stock, tomato puree, red wine, and vinegar.
5.Cover with a lid and bake for 2 hours or until meat is tender.
6.Remove from oven, stir, and add additional salt, pepper, Worcestershire sauce, and Tabasco sauce to taste.
7.Let stand for 5-10 minutes before serving.
