4 lbs beef eye round , about 4 wide , tied at 2 intervals
2 teaspoons coarse salt

2 cups boiling water
2 tablespoons unsalted butter
1/2 cup onion , finely chopped
1/2 teaspoon garlic , finely chopped
1/2 cup dry bread crumbs from day old bread , crusts removed
1 egg
1 teaspoon salt
1/4 teaspoon dried thyme
1/2 teaspoon pepper
2 tablespoons parsley , finely chopped
1 tablespoon flour
2 egg yolks
1 cup sour cream

Instructions
