Ingredients

2 1/2 lbs potatoes , peeled and cut into 1-inch cubes ( about 8 medium )
8 bacon , strips ( thick sliced )
1 can diced tomatoes and green chilies , drained
3 cups shredded Mexican blend cheese
4 green onions , chopped
1/3 cup chopped green pepper
1/3 cup chopped red bell pepper
1 1/2 cups reduced-fat mayonnaise
2 tablespoons lime juice
1 teaspoon seasoning salt
1/4 teaspoon pepper
1 1/2 teaspoons chili powder
2 tablespoons minced fresh cilantro

Instructions

1.Preheat oven to 375°F. Grease a 13x9-inch baking dish.
2.In a large pot, cook potatoes in boiling water for 8-10 minutes or until tender. Drain.
3.In a skillet, cook bacon over medium heat until crisp. Remove bacon and discard all but 1 tablespoon of drippings. Crumble bacon and add back to skillet with diced tomatoes and green chilies. Cook for 2 minutes or until heated through.
4.In a large bowl, mix shredded cheese, green onions, green and red bell peppers, mayonnaise, lime juice, seasoning salt, pepper, chili powder, and cilantro. Stir in potato cubes. Spoon mixture into prepared baking dish.
