The result is a warming and comforting dish that is perfect for a cozy night in. Whether you are a gumbo aficionado or a newcomer to this classic Southern dish, the Dupre Family Chicken and Sausage Gumbo is sure to impress.

Instructions

.Preheat the oven to 350°F.
.Season the drumsticks and chicken breast halves to taste with cayenne pepper and garlic powder.
.Heat 1/2 cup olive oil in a large Dutch oven over medium-high heat. Add the chicken drumsticks and breast halves and brown on all sides, about 10 minutes. Transfer to a baking sheet.
.Stir the white wine into the Dutch oven, scraping up any browned bits.
.In the same Dutch oven, heat 1/4 cup olive oil over medium heat. Add the onion, bell pepper, and celery; sauté until tender, about 15 minutes.
.In a separate pot, heat 1 cup canola oil over medium heat. Gradually add 1 cup all-purpose flour until smooth. Cook, whisking constantly, until the roux is the color of peanut butter, about 30 minutes.
.Carefully stir the hot roux into the vegetable mixture until well combined. Gradually whisk in the chicken broth and 5 cups boiling water.
.Add the Cajun seasoning and smoked sausage to the Dutch oven. Stir in the remaining 5 cups boiling water. Add the chicken drumsticks and breast halves.
.Cover and bake until the meat is tender and the gumbo is thickened, about 1 hour.
.In another pot, heat 2 tablespoons olive oil over medium heat. Add the rice and sauté until it turns opaque, about 5 minutes. Add 3 cups water. Bring to a boil. Reduce heat, cover, and simmer until the water has evaporated and the rice is soft, about 20 minutes. Remove from heat and keep covered until ready to serve.
.To serve, spoon the rice into bowls and ladle the gumbo over the top. Sprinkle with green onions and enjoy!
