Ingredients

1 1/2 lbs small potatoes
1 1/2 tablespoons kosher salt , plus
1 teaspoon kosher salt
8 -10 blanched almonds
2 tablespoons sesame seeds
2 large black cardamom pods
2 teaspoons coriander seeds
1 1/2 teaspoons whole cumin seeds
4 garlic cloves , peeled and chopped
1 tablespoon fresh ginger , minced
8 tablespoons vegetable oil
1 medium onion , peeled and chopped
5 cardamom pods , very lightly crushed
1/4 teaspoon turmeric
1/4 teaspoon cayenne
1 cup plain yogurt
1 teaspoon garam masala
Dum Aloo, also known as Moghlai Potatoes, is a traditional Indian dish that originated in the northern state of Kashmir. It is made with small potatoes that are first boiled and then coated in a rich, aromatic sauce made with yogurt and a blend of spices. Instructions

1.Pierce each potato in several places with a fork or knife.
2.In a large pot, bring enough water to cover the potatoes to a boil with the 1 1/2 tablespoons of kosher salt.
3.Add the potatoes to the pot and boil until fork-tender, about 10-12 minutes.
4.Drain the potatoes and let them cool slightly before cutting in half.
5.In a food processor or blender, grind the almonds, sesame seeds, black cardamom pods, coriander seeds, cumin seeds, garlic, and ginger until smooth.
6.Heat the vegetable oil in a large skillet over medium heat and add the onion.
7.Cook until softened, about 5-6 minutes.
8.Add the ground spice mixture and cook for another 2-3 minutes.
9.Add the lightly crushed cardamom pods, turmeric, and cayenne and cook for another minute.
10.Add the yogurt and 1 teaspoon of kosher salt and stir to combine.
11.Add the potatoes to the skillet and stir to coat evenly with the sauce.
12.Cover and cook over low heat for about 10-15 minutes, until the potatoes are tender and the sauce has thickened.
13.Sprinkle with garam masala before serving.
