1 kg potato , peeled , washed and trimmed into cylindrical shapes ( large sized )
ghee or oil , to deep fry
150 g panir , grated ( cottage cheese )
4 green chilies , chopped
5 g ginger , peeled and finely chopped
10 cashews , chopped
20 sultanas , chopped

150 g fresh coriander leaves , cleaned , washed and chopped
30 g raw mangoes , peeled and roughly chopped
75 g mint leaves , cleaned , washed and chopped
100 g ghee
300 g onions , peeled and roughly diced
40 g ginger-garlic paste
5 g cumin seeds
5 g red chili powder
300 g yoghurt , beaten
400 ml water , plus
1/2 cup water , divided
50 g cashew nuts paste
10 g garam masala powder

Instructions

1.Firstly, deep fry the cylindrical potato shapes in heated ghee or oil until golden brown. Set aside on a kitchen towel to absorb excess oil.
2.Take a pan and heat the ghee.
3.Add onions, cumin seeds, ginger-garlic paste and allow them to cook until brown. Add grated paneer, mint leaves, ginger, green chilies, cashews, sultanas, salt, raw mangoes, and coriander leaves. Cook for 2-3 minutes.
4.Now add yoghurt, red chili powder, cashew nuts paste, garam masala powder, and 400 ml of water. Mix well and simmer till the gravy thickens.
5.Add the fried potatoes and cook for 5-10 minutes or until the potatoes absorb the flavors. Serve hot with naan or rice.
