Ingredients

1/2 kg boiled potatoes , grated
50 g sesame seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon cumin powder
1 teaspoon coriander powder
2 teaspoons ginger-garlic paste
salt
3 tablespoons coriander leaves , washed and finely chopped
3 tablespoons mint leaves , washed and finely chopped
cornflour , as required for rolling
3 onions , sliced
250 g fresh yoghurt
oil , to fry
2 tablespoons butter
2 tomatoes , chopped
2 onions , chopped
2 tablespoons tomato paste
1 teaspoon cumin powder
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon coriander powder
50 g fresh cream
1 tablespoon ginger-garlic paste
whole spices , as required
Dum Aloo Banarsi is a popular Indian potato dish named after the city of Banaras (also known as Varanasi) where it originated. The dish is typically served with fragrant basmati rice or freshly made naan bread. With its rich and savoury flavours, Dum Aloo Banarsi is enjoyed across India and around the world as a traditional comfort food or a special occasion dish.

Instructions

1.In a bowl, mix the grated boiled potatoes, sesame seeds, turmeric powder, red chili powder, cumin powder, coriander powder, ginger-garlic paste, salt, coriander leaves, and mint leaves until well combined.
2.Roll the mixture into small balls, dusting with cornflour as needed.
3.Heat oil in a pan and fry the potato balls until golden brown, then remove from the oil and set aside.
4.In a separate pan, heat butter and sauté the sliced onions until they turn golden brown.
5.Add the chopped tomatoes, tomato paste, cumin powder, red chili powder, turmeric powder, coriander powder, ginger-garlic paste, fresh cream, and whole spices, stirring until well combined.
6.Add the fresh yoghurt and mix well.
7.Add the fried potato balls to the pan, mix well and let it cook for 4-6 minutes.
8.Serve hot and enjoy!
