Ingredients

1 quart whole milk
2 cups sugar
1/4 teaspoon baking soda
1 pinch cinnamon

1/2 cup heavy cream

Instructions

1.Preheat the oven to 325°F.
2.In a large saucepan, bring the milk, sugar, baking soda, and cinnamon to a boil, then reduce the heat to low and simmer for about 1 hour and 30 minutes or until the mixture thickens and turns caramel in color, stirring occasionally.
3.Take off from heat and let it cool.
4.Beat the cream cheese in a large bowl until smooth. Then beat in the eggs, one by one, until incorporated.
5.Add in the vanilla and heavy cream. Mix until well combined.
6.Stir in the dulce de leche until well incorporated.
7.Pour the cheesecake mixture over the cooled crust in a 9x13 inch baking pan. Smooth out the surface with a spatula.
8.Bake for 45-50 minutes or until the cheesecake is set around the edges but still slightly jiggly in the center.
9.Turn off the oven, crack open the door, and let the cheesecake cool down in the oven.
10.Once cooled down, take out the cheesecake and chill it in the fridge for at least 8 hours before slicing.
