Ingredients

4 flat bread , such as pita breads
virgin olive oil , for dipping
2/3 cup sesame seeds
1/2 cup hazelnuts , finely chopped
1/2 cup cashews , finely chopped
1/2 cup chickpeas ( cooked or canned )
1/2 cup coriander seed
3 tablespoons cumin seeds
1 teaspoon dried thyme
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons paprika

Instructions

1.Preheat the oven to 350°F.
2.Cut the flatbreads into small wedges and arrange them on a baking sheet. Drizzle the wedges with olive oil and bake for 10-15 minutes, or until they are lightly crispy.
3.While the flatbreads are baking, toast the sesame seeds in a dry frying pan over medium heat for 2-3 minutes, or until golden brown. Transfer the sesame seeds to a bowl and set aside.
4.Next, toast the hazelnuts and cashews in the same pan for about 5 minutes, or until fragrant and lightly browned. Transfer the nuts to a food processor and pulse them several times, until they are finely chopped.
5.Add the chickpeas, coriander seeds, cumin seeds, dried thyme, salt, black pepper, and paprika to the food processor. Pulse the mixture 10-15 times, or until it is well combined and looks like coarse sand.
6.Transfer the mixture to a bowl and stir in the toasted sesame seeds.
7.Serve the dukkah with the baked flatbread wedges and a small bowl of olive oil for dipping.
