Ingredients

2/3 cup hazelnuts
1/2 cup sesame seeds
2 tablespoons coriander seeds
2 tablespoons cumin seeds
2 tablespoons freshly ground black pepper
1 teaspoon flaked sea salt

Instructions

1.Preheat your oven to 350°F.
2.Spread the hazelnuts out on a baking sheet and roast in the oven for 10-12 minutes, or until they are lightly golden and fragrant.
3.Once they are ready, let them cool and then rub off as much of the skins as you can.
4.In a dry frying pan, toast the sesame seeds over medium heat for 2-3 minutes until golden and fragrant. Remove from heat and transfer to a bowl.
5.In the same frying pan, add the coriander seeds and cumin seeds and toast for 1-2 minutes, or until fragrant and slightly browned. Remove from heat and transfer to a spice grinder.
6.Once the seeds are ground into a fine powder, transfer them to the bowl with the sesame seeds. Add the hazelnuts, freshly ground black pepper, and sea salt. Use a pestle and mortar or food processor to grind everything together until you get a coarse mixture.
