Ingredients

6 lbs ducklings , cut into 12 pieces
1 cup onion , finely chopped
1 cup tomatoes , diced in small pieces
1 teaspoon salt
1 teaspoon curry powder ( optional )
1/2 teaspoon crushed red pepper flakes
4 tablespoons oil or 4 tablespoons margarine
4 large bananas
2 quarts water

Instructions

1.Heat the oil/margarine in a large pot and add the onion. Fry until golden brown.
2.Add the duckling pieces and fry until brown on all sides.
3.Add the tomatoes, salt, curry powder (optional), and crushed red pepper flakes. Mix well and cook for 5 minutes.
4.Add 2 quarts of water and bring to a boil. Reduce the heat and let the duck simmer for 30-40 minutes, or until tender.
5.While the duck is simmering, peel and cut the bananas into thick slices. Add them to the pot 10-15 minutes before the duck is done.
6.Serve the Duckling Dar-Es-Salaam hot, with rice or another side of your choice.
