5 -6 lbs whole duck , cleaned and washed
1 tablespoon cumin powder
1 tablespoon chili paste
2 tablespoons ginger paste
1 tablespoon garlic paste
1 teaspoon ground szechwan pepper ( timur )
1/4 teaspoon grated nutmeg
1 teaspoon turmeric
2 tablespoons molasses
2 tablespoons honey
salt and pepper
oil ( for deep frying )

Instructions

1.First, marinate the cleaned and washed duck with cumin powder, chili paste, ginger paste, garlic paste, ground szechwan pepper, grated nutmeg, turmeric, molasses, honey, and salt and pepper for at least two hours.
2.Heat the oil in a deep-fryer or heavy-bottomed pan to 375°F.
3.Once the oil is hot, add the marinated duck to the oil in batches and fry until crispy and golden brown for about 10-15 minutes.
4.Remove the duck from the oil, drain on paper towels, and serve immediately.
