Ingredients

1 roast duck carcass , including wings and neck
1 large onion , peeled and roughtly chopped
1 large carrot , peeled and roughtly chopped
2 stalks celery , roughly chopped
1 red chili pepper , slit
2 garlic cloves
4 slices ginger
1 star anise
2 pieces lime rind , no pith
3 coriander sprigs
1/2 teaspoon black peppercorns , lightly crushed

Instructions

1.Preheat oven to 450F/230C.
2.In a large roasting pan, place the duck carcass and roast it for 20-30 minutes until golden brown.
3.In a stockpot, combine the roasted duck carcass, onion, carrot, celery, red chili pepper, garlic, ginger, star anise, lime rind, coriander sprigs, and black peppercorns.
4.Add enough water to cover all of the ingredients in the pot and bring it to a boil.
5.Reduce the heat to low and let it simmer for at least 3 hours, skimming the surface occasionally to remove any foam or impurities.
6.Strain the stock through a fine-mesh sieve and discard the solids.
7.Let the stock cool completely before transferring it to an airtight container and refrigerate.
