Ingredients

4 lbs duck , cut up or 6 lbs duck , breast removed , reseve for another recipe , cut up
2 cans beef broth
2 cans chicken broth
4 cups water
1 large onion , roughly chopped
2 stalks celery , roughly chopped
2 carrots , roughly chopped
1 dried bay leaf
8 large fresh sage leaves
1 1/2 teaspoons ground cumin
1 teaspoon powdered ginger
1 teaspoon dried thyme
3/4 cup long grain brown rice ( long cooking style )
12 ounces yams , peeled and diced
1 cup frozen tiny peas
1 tablespoon chopped fresh sage

Instructions

1.In a large pot, add the duck and both broths along with the water and bring to a boil. Skim off any foam that appears on the surface of the soup.
2.Add in the onion, celery, carrots, bay leaf, sage, cumin, ginger, and thyme. Lower the heat and let simmer for 40 minutes.
3.Add in the brown rice and yams and let simmer for an additional 30 minutes or until the rice is cooked and the yams are tender.
4.Add in the frozen peas and chopped sage. Stir well and let sit for 5 minutes.
5.Serve hot with crusty bread or crackers.
