Ingredients

1 duck ( defrosted )
1 jar orange marmalade
1 lemon , juice of
1/4 cup orange juice concentrate ( thawed )
1/2 teaspoon salt
1/2 teaspoon pepper ( freshly ground black pepper )
2 tablespoons duck fat
2 tablespoons marsala wine
4 tablespoons honey
1 tablespoon ginger powder
1/4 cup chicken broth
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1 teaspoon cider vinegar
1 teaspoon sesame oil
1 teaspoon minced garlic ( from jar )
Crispy Twice-Baked Duck, also known as Xang Su Ya, is a traditional Chinese dish that's popular in many parts of the world. Instructions

1.Preheat the oven to 350 degrees F.
2.Remove the neck and giblets from the duck.
3.Remove any excess fat from the duck's cavity and prick the skin all over with a fork.
4.In a small bowl, stir together the orange marmalade, lemon juice, and orange juice concentrate.
5.Season the duck inside and out with salt and pepper, then brush the marmalade mixture over the outside of the bird.
6.Roast the duck for 2 hours, basting it with the pan juices every 30 minutes.
7.Remove the duck from the oven, remove any excess fat, and place the duck in a baking dish.
8.In a small saucepan, heat the duck fat, marsala wine, honey, ginger powder, chicken broth, soy sauce, hoisin sauce, cider vinegar, sesame oil, and minced garlic over medium heat, stirring occasionally, until smooth.
9.Pour the sauce over the duck in the baking dish.
10.Bake the duck in the oven for another 20-30 minutes, until the skin is crispy and the duck is heated through.
