Ingredients

1 fresh lobster , about 1 kilo in weight
50 g butter
4 tablespoons Irish whiskey
150 ml double cream
1 teaspoon fresh lemon juice
1 teaspoon mustard
salt

Instructions

1.Preheat the oven to 180°C.
2.Bring a large pot of salted water to a boil. Add the lobster and cook for 8-10 minutes or until the lobster is bright red.

4.Once cool, remove the meat from the lobster and cut it into bite-sized pieces.
5.In a large frying pan, melt the butter over medium heat.

7.Add the Irish whiskey to the pan and flambe the lobster.
8.Once the flames subside, add the double cream, fresh lemon juice, and mustard to the pan.
9.Season with salt and black pepper to taste.
10.Stir the ingredients together and cook for an additional 2-3 minutes or until everything is heated through. Serve immediately.
