1 lb butternut squash or 1 lb pumpkin , peeled , seeded , cut in bite-sized pieces
1/2 cup onion , chopped
2 tablespoons olive oil
1/2 tablespoon berbere
2/3 teaspoon cumin powder
2/3 teaspoon dried basil

Instructions

1.Heat the oil in a pan and add the onions. Cook until onion is soft.
2.Add the berbere, cumin and dried basil and cook for one minute.
3.Add your pumpkin/butternut squash and enough water to cover the vegetables. Bring to a boil.
4.Reduce heat, cover and simmer until squash is tender. Add additional water if needed to keep the mixture from drying out.
5.Once cooked, remove from heat and enjoy!
