Dried Oyster and Scallop Congee, also known as Hou Si Fan in Chinese, is a traditional breakfast dish that has been enjoyed in southern China for centuries. This simple dish consists of rice that is slow-cooked in a large pot of hot water until it breaks down and forms a creamy porridge-like consistency. Then, it is flavored with sliced carrots and dried oysters and scallops, which are pre-soaked in hot water for several hours before use, to give the dish its signature aroma and rich umami flavor. Often served with chopped spring onions on top, it is a popular dish to be enjoyed year-round but especially during winter when people crave warm, filling meals to start their day.

Instructions

1.In a large pot, bring the rice and water to a boil. Reduce heat to medium-low and simmer, stirring occasionally, for about 1 hour or until the rice is soft and broken down, and the mixture has thickened.
2.In a separate pan, heat the oil over medium heat. Add the diced carrot and cook for 3-4 minutes or until soft.
3.Add the pre-soaked dried oysters and scallops to the pot, along with the cooked carrot. Simmer for another 5-10 minutes, or until heated through.
4.Garnish with chopped spring onions and serve hot.

PROS

This classic Chinese breakfast dish is comforting, nutritious, and satisfying.

The combination of dried oysters and scallops makes this dish rich in umami flavor and packed with nutrients, like protein, iron, and calcium.

With its creamy texture and delicious aroma, it is a perfect way to start your day and keep you energized until lunch time.

CONS

This dish can be a bit heavy on your stomach due to its high carb content.

It may not be suitable for people who follow a low-carb diet or those who prefer a lighter breakfast option.

Moreover, it requires some pre-planning, as you need to soak the dried oysters and scallops overnight.

HEALTH & BENEFITS

Dried oysters and scallops are both excellent sources of protein, iron, and calcium, which are crucial for maintaining strong bones, healthy muscles, and a robust immune system.
Moreover, they are low in fat and calories yet high in flavor, making them a perfect ingredient for adding zest to your meal.
Congee, on the other hand, is easy to digest and provides a sustained release of energy to your body, thanks to its high complex carb content.
