1 1/2 cups sugar | |
3 cups margarine | |
1 tablespoon sour cream | |
1 tablespoon oil | |
3 cups flour | |
1 cup raisins | |
1 cup apricot preserves | |
1 cup walnuts | |
2 granny smith apples ( optional ) |
1. | Preheat oven to 350°F. |
2. | In a large bowl, cream together sugar and margarine until light and fluffy. |
3. | Beat in eggs one at a time, then mix in sour cream and oil. Gradually stir in flour, raisins, apricot preserves, and chopped walnuts. |
4. | Peel and thinly slice apples, if using. |
5. | Spread the mixture evenly in a tart pan, layering apple slices on top if desired. |
6. | Bake in preheated oven for 45-50 minutes or until lightly browned. |
7. | Remove from the oven and let cool. |
8. | In a medium bowl, beat egg whites until stiff peaks form. |
9. | Gently spread the whipped egg whites over the cooled tart. |
10. | Return to the oven and bake for an additional 20 minutes or until the egg whites are lightly browned. |
11. | Cool before slicing and serving. |
