750 g white flour
75 g sugar
1/2 teaspoon salt
1 lemon , zest of
100 g butter
1/2 pint milk
30 g yeast
5 tablespoons warm water
2 eggs
200 g sultanas
Dreikönigskuchen, or 3 Kings' Cake, is a rich and sweet cake typically enjoyed on Epiphany day in Switzerland, Austria, and Germany. The cake is made with a sweet bread-like dough that is mixed with butter, sugar, and sultanas. The cake is then traditionally baked with a small trinket or coin inside, and the person who finds the trinket or coin is considered lucky and is believed to have good fortune in the coming year. Instructions

1.In a large mixing bowl, sift 750g of white flour, 75g of sugar, and 1/2 teaspoon of salt. Add in the lemon zest.
2.In a small milk pan, heat 100g of butter and 1/2 pint of milk until the butter is melted and the mixture is lukewarm.
3.In another bowl, mix 30g of yeast, 5 tablespoons of warm water and 1 tablespoon of sugar until the yeast dissolves. Let it sit for 5 minutes until bubbles form.
4.Add the milk mixture, yeast mixture and two eggs to the flour mixture and mix until everything is combined. Knead the dough for about 10 minutes on a floured surface until the dough is smooth and elastic.
5.Place the dough in a bowl and cover with a damp cloth. Set it aside to rise for 1-2 hours or until the dough is doubled in size.
6.Gently stir in 200g of sultanas and knead the dough for a few more minutes.
7.Preheat your oven to 350°F. Grease a circle cake pan with butter and sprinkle flour on it.
8.Roll the dough into a ball and place it in the pan. Make sure the dough is even and extends to the sides.
9.Make a small hole in the center of the cake and place a small trinket or coin inside the dough. Cover it with more dough.
10.Brush the top of the cake with a beaten egg and bake it in the oven for about 50 minutes or until golden brown.
