Ingredients

4 tablespoons olive oil
2 hot green peppers ( use a small red bell pepper if you want to wuss out )
4 eggs
4 peeled garlic cloves
4 small ripe tomatoes
salt
freshly grated black pepper
1 tablespoon paprika ( I use a hot Moroccan style )
1/2 teaspoon za'atar spice mix
Shakshoukah, also spelled shakshuka, is a popular Middle Eastern dish that has gained worldwide popularity. It is essentially a spicy tomato and egg stew that is easy to make and versatile. Instructions

1.Dice the garlic and hot peppers, then place them in a large skillet or frying pan with hot olive oil. Fry the garlic and peppers on medium heat for a minute or two until the garlic starts to brown.
2.Add diced tomatoes, salt, pepper, paprika, and za'atar spice mix. Cook until tomatoes have broken down and somewhat thickened for 10-15 minutes on medium heat.
3.With a spoon, make four wells in the tomatoes around the edges of the skillet. Crack one egg into each well season with salt and cover the skillet. Cook for 5-8 minutes until eggs are cooked the way you like.
4.Take off the lid and let it cool down a bit, then sprinkle fresh herbs
5.over the top and serve immediately with some crusty bread.
