Ingredients

3 cups all purpose flour
1/4 cup sugar
1 1/2 teaspoons salt
1 1/4 cups very cold unsalted butter , cut into tbsp size pieces
1/3 cup very cold vegetable shortening , cut into 4 pieces
about 1/2 cup ice water
2 1/2 pints fresh blueberries
1 cup sugar , or a little more , to taste , plus more for dusting
1/2 cup all purpose flour

1/2 lemon , zest of , Coarsely grated
1 dash fresh lemon juice , or a little more , to taste
1/4 cup dry bread , crumbs ( you can use packaged unseasoned crumbs )
1 large egg , beaten with 1 tsp of water , for egg wash
sugar , for dusting
This double crusted blueberry pie is a classic dessert that is sure to impress friends and family. Instructions

1.In a large mixing bowl, whisk together flour, sugar and salt.
2.Add butter and shortening and mix until the mixture is crumbly.
3.Add ice water, a tablespoon at a time, and mix until the dough comes together.
4.Divide the dough into two pieces, flatten them into disks, wrap them in plastic and refrigerate for at least an hour.
5.Preheat the oven to 400°F / 200°C.
6.In a separate bowl, mix blueberries, sugar, flour, salt, lemon zest and juice.
7.Roll out one of the dough disks and transfer it onto a pie dish.
8.Sprinkle bread crumbs over the bottom of the crust.
9.Pour the filling onto the crust.
10.Roll out the second dough disk and place on top of the filling.
11.Trim the edges of the crust and fold it under.
12.Brush the top with the egg wash and sprinkle with sugar.
13.Cut a few slits in the top crust.
14.Bake for 20 minutes. Then reduce the heat to 375°F / 190°C and bake for another 40-50 minutes, until the crust is golden and the filling is bubbling.
