10 large egg yolks , lightly beaten
2 ounces Roquefort cheese , crumbled ( about 1/2 cup )
1 1/2 cups freshly grated gruyere cheese
salt
fresh ground white pepper
8 large egg whites

Instructions

1.Preheat oven to 375°F with rack in middle.
2.Melt 2 tablespoons butter in a heavy medium saucepan over medium-low heat.
3.Whisk in flour, then cook, whisking frequently, 3 minutes.
4.Whisk in milk and cream and bring to a boil, whisking constantly.
5.Reduce heat and simmer, whisking occasionally, 3 minutes (mixture will be thick).
6.Remove from heat and whisk in goat cheese and yolks.
7.Fold in Roquefort and 1 cup Gruyère, 3/4 teaspoon salt, and 1/4 teaspoon white pepper.
8.Beat egg whites with a pinch of salt using an electric mixer at medium speed until they just hold stiff peaks.
9.Stir one fourth of whites into cheese mixture to lighten, then fold in remaining whites gently but thoroughly.
10.Spoon mixture into ramekins, then place ramekins in a small roasting pan and add enough hot water to reach halfway up sides of ramekins.
11.Bake in a water bath until soufflés are puffed and golden brown, 25 to 30 minutes.
12.Cool in pan on a rack 15 minutes (soufflés will fall slightly).
13.Leave oven on.
14.Run a sharp knife around edges of ramekins and remove tops of soufflés.
15.Melt remaining 2 tablespoons butter and brush over soufflés.
16.Sprinkle remaining 1/2 cup Gruyère over soufflés and bake in pan until cheese is melted and golden, 10 to 12 minutes.
