1 cup butter , divided
1 onion , chopped
2 1/2 cups water , divided
1 can tomato paste
3/4 cup berbere seasoning
1 teaspoon chopped garlic
1/2 teaspoon ground ginger
4 skinless , boneless chicken breasts , cubed
1/3 cup sweet white wine
1/2 teaspoon ground cardamom
1/2 teaspoon freshly ground black pepper
4 hard-boiled eggs
Doro Wat is a delicious meal that is quintessentially Ethiopian. This spicy stew is often served at family gatherings and events. Instructions

1.In a large pot, melt 1/2 cup butter over medium heat.
2.Add the chopped onions and sauté until softened, about 5 minutes.
3.Pour in 1 1/2 cups of water, tomato paste, berbere seasoning, chopped garlic, and ground ginger. Stir to combine.
4.Add the cubed chicken, stir to coat, cover and let simmer over low heat for 1 to 1 1/2 hours until chicken is cooked and sauce has thickened.
5.In a separate pan melt remaining 1/2 cup butter over medium heat then mix in sweet white wine, ground cardamom, and freshly ground black pepper. Add hard-boiled eggs to the pan and cook for 3-5 minutes until eggs are coated in sauce.
6.Add the eggs and extra sauce to the chicken dish, mixing everything together. Serve hot and enjoy!
