Ingredients

1 kg gourd ( doodhi )
1 1/2 liters milk
400 -500 g sugar
cardamom powder
saffron ( a few flakes )
1 tablespoon ghee

Instructions

1.Peel and grate the gourd.
2.In a large pan, heat ghee and add the grated doodhi. Cook on medium heat until the liquid released by doodhi gets evaporated.
3.Add milk and saffron flakes and cook for another 15-20 minutes, stirring occasionally until the mixture is reduced by half.
4.Once thickened, add sugar and cardamom powder and mix well. Cook for another 5-10 minutes until the mixture thickens and is no longer sticking to the pan.
5.Serve hot and garnish with nuts and raisins if desired.
