Ingredients

1 calabash gourd , peeled and cut into cubes
1/2 cup split Bengal gram ( chana dal )
1 teaspoon ground turmeric
3 cups water
2 tablespoons cooking oil
4 dried red chile peppers , broken into pieces
1 teaspoon cumin seeds
1 tablespoon minced fresh ginger root
1 teaspoon minced garlic
1 teaspoon ground red pepper
salt to taste
1 teaspoon white sugar
Doodhi chana is a traditional Indian recipe that is popular in many households. It is a simple and healthy dish that is made by combining chana dal, also known as split Bengal gram, with cubes of calabash gourd or doodhi. The dish is flavored with aromatic spices like cumin, ginger, and garlic, and is mildly spiced with ground red pepper and turmeric. Instructions

1.Rinse the chana dal well and soak it in water for 2-3 hours.
2.In a pressure cooker, combine the soaked dal, cubed doodhi, ground turmeric, and 3 cups of water. Cook on high flame till 2-3 whistles and then allow the pressure to release naturally.
3.In a separate pan, heat the cooking oil and add dried red chile peppers and cumin seeds. Cook till the cumin crackles and then add minced ginger and garlic. Cook for 1-2 minutes until fragrant.
4.Add the cooked doodhi chana to the pan and mix well. Add ground red pepper, salt, and sugar. Cook for another 5 minutes until heated through. Serve hot with rice or roti.

CONS

The calabash gourd can sometimes taste bitter, especially if it is not fresh.
