1 teaspoon Dijon mustard ( french 's is our preferred brand )
1 -2 fresh garlic clove
1/2 lemon , juice of
2 teaspoons Worcestershire sauce ( lea & perrins is best )
2 dashes Tabasco sauce
1 raw egg yolk ( coddled if you prefer but i dont like spoiled eggs ! ! ! ! lolol )
2 tablespoons red wine vinegar
extra virgin olive oil
romaine lettuce
parmesan cheese
crouton
bacon bits ( real..ok ! ! )
grilled chicken or shrimp , if desired
fresh ground pepper

Instructions

1.In a bowl, add Dijon mustard, minced garlic, lemon juice, Worcestershire sauce, Tabasco sauce, and raw egg yolk. Mix well.
2.Add red wine vinegar and mix again.
3.Gradually add extra virgin olive oil while whisking constantly until the desired consistency is achieved.
4.In a large bowl, add torn romaine lettuce leaves, shredded parmesan cheese, croutons, and bacon bits. Toss gently.
5.Drizzle the Caesar dressing over the salad and top with grilled chicken or shrimp, if desired.
6.Sprinkle freshly ground black pepper over the salad and serve immediately.
