1 lb ground meat ( I like 93 % /7 % ground turkey )
1 small onion , diced
1 bell pepper , diced
2 teaspoons chili powder
2 teaspoons seasoning salt
2 teaspoons lemon pepper
2 teaspoons garlic powder
1 teaspoon cumin
1 can mushrooms ( drained )
1 can black olives ( drained )
1 can diced tomatoes
1 can tomato sauce
1 can mexicorn
1 can ranch style beans ( I like black )
1 cup shredded cheddar cheese
1 box Jiffy cornbread mix
This Tex Mex Cornbread Casserole is the perfect meal for a cozy night in. Instructions

1.Preheat your oven to 375F
2.Brown ground meat in a large skillet over medium heat with onion and bell pepper.
3.Add chili powder, seasoning salt, lemon pepper, garlic powder, and cumin to the skillet and combine with the meat mixture.
4.Add mushrooms, olives, diced tomatoes, tomato sauce, mexicorn, and beans to the skillet and mix until well combined.
5.Prep a 9x13 inch baking dish and spread the meat mixture evenly across the bottom.
6.Sprinkle shredded cheddar cheese over the meat mixture.
7.In a separate bowl, mix together the Jiffy cornbread mix according to the instructions on the box.
8.Spread the cornbread mixture evenly over the top of the cheese.
9.Bake the casserole for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
10.Let the casserole cool for a few minutes before serving.
