10 ounces frozen flour rounds ( i.e . Don Pepe , can be found in latin stores freezer section )
2 cups all-purpose flour
1 teaspoon baking soda
3 tablespoons cold water
salt
2 cups oil
1 lb ground chicken ( beef , pork , or turkey )
1 tablespoon oil
1 tablespoon tomato paste
2 leaves coriander , chopped finely
2 teaspoons salt
1 small red onion
1 medium green pepper
ground black pepper ( to taste )
green olives ( optional )
raisins ( optional )

Instructions

1.Preheat oven to 375°F
2.Defrost the flour rounds according to package instructions, then roll each round into a thin circle
3.In a frying pan, cook the ground chicken over medium heat until browned. Add onions, green peppers, tomato paste, coriander, black pepper, and salt. Cook until vegetables are tender and meats cooked through. Add olives and raisins if desired.
4.Cut each round into 3 equal pieces and spoon 1-2 tablespoons of the meat filling one one half of the round.
5.Fold the other half over the filling, using a fork to press and seal the edges.
6.Place the pastelitos seam-side down on a baking sheet lined with parchment paper and brush the top with water.
7.Bake in the oven for 20-25 minutes, until golden brown and crispy.
