Ingredients

2 cups rice
4 cups water ( the water you boiled the beans in if possible )
1 cup cooked black beans
3 tablespoons vegetable oil
1 tablespoon tomato paste ( not sauce )
1/4 cup cubanel green peppers or 1/4 cup green bell pepper , finely chopped
1/2 medium red onion , chopped
1/2 teaspoon dried oregano
2 fresh garlic cloves , mashed ( or pressed )
1 sprig fresh cilantro ( with stem )
1 teaspoon fresh parsley , finely chopped
1 chicken bouillon cubes or 1 chicken stock cube
1 teaspoon salt

Instructions

1.In a large pot, heat the vegetable oil over medium-high heat.
2.Add the chopped onion, green peppers, and mashed garlic cloves, and sauté until the onions are translucent, about 3-4 minutes.
3.Add the tomato paste and continue to cook for another 2-3 minutes.
4.Add in the cooked black beans, oregano, cilantro, and parsley, and cook for another 2-3 minutes.
5.Add in the rice and stir to combine with the bean mixture.
6.Pour in the water (or reserved bean water) and chicken bouillon cube or stock cube, and stir to combine.
7.Bring the mixture to a boil, then reduce the heat to low and cover the pot.
8.Cook for 18-20 minutes or until the rice is cooked through.
9.Fluff the rice with a fork to separate the grains and serve hot.
