Ingredients

6 medium red capsicums ( bell peppers )
200 g basmati rice
200 g mushrooms ( optional )
100 g split peas ( soaked overnight )
1 bunch dill
1 bunch mint
1 bunch coriander
2 teaspoons tarragon ( dried is accepted )
1 bunch shallot
1 can crushed tomatoes
2 tablespoons tomato paste
1 cup vegetable stock
2 teaspoons turmeric
salt and pepper
Dolme Felfel is a traditional Persian dish that has become popular all around the world. It consists of bell peppers that are stuffed with a flavorful mixture of rice, split peas, herbs, and spices. The dish is usually served as a main course, and it is a great vegetarian-friendly option. The combination of the sweet, roasted capsicum and the savory, spiced rice stuffing is simply delicious. Instructions

1.Rinse the rice in water several times and then soak it in fresh water for at least 30 minutes.
2.Rinse the split peas and cook them in boiling water for 15-20 minutes or until they are fully cooked.
3.Chop the shallot and mushrooms into small pieces, and sauté them in a pan with a little oil until they are golden brown.
4.Add the cooked split peas to the pan with the shallot and mushrooms and continue to sauté for a few more minutes.
5.Add the crushed tomatoes, tomato paste, vegetable stock, turmeric, salt, and pepper to the pan and mix everything together.
6.Once the contents are well combined turn the heat off and add the chopped herbs, rice, and 1/2 cup of water.
7.Preheat oven to 350 degrees F.
8.Cut off the tops and remove the seeds of the capsicums.
9.Fill the capsicums with the rice mixture using a spoon.
10.Once all peppers are filled, put their tops back on.
11.Place the stuffed capsicums in a baking dish and add 1 cup of water.
12.Cover the dish with foil and bake in the oven for 1-1.5 hours until the capsicums are fully cooked.
13.Uncover and cook for an additional 10-15 minutes until the tops of the capsicums are slightly browned.
