Ingredients

1 jar grape leaves , packed in brine
1/2 cup olive oil
2 large onions , finely chopped
4 green onions , finely chopped
1 1/2 cups long-grained converted rice
1 cup water
2 tablespoons chopped fresh spearmint ( or 1 tblsp dried , crumbled )
3 tablespoons chopped fresh dill ( do n't use dried no matter what )
1/3 cup pine nuts , toasted
1/3 cup currants
1 1/2 - 2 cups water ( enough to just cover dolmathes along with olive oil )
3/4 cup olive oil
1 lemon , juice of
lemon juice , for serving at table

Dolmathes (Stuffed Grape Leaves) are a staple of Mediterranean cuisine and make a delicious appetizer or light meal. Instructions

1.Rinse grape leaves and soak in warm water for at least 30 minutes.
2.In a medium saucepan, sauté onions and green onions in 1/2 cup of olive oil until translucent.
3.Add the rice and 1 cup of water and stir well; cover and simmer over low heat for 20 minutes.
4.Combine the cooked rice with chopped spearmint, dill, pine nuts, currants, and lemon juice until thoroughly mixed.
5.Preheat oven to 350°F. Line the bottom of a baking dish with leftover grape leaves.
6.Lay out a grape leaf, shiny side down, and place about 1-2 teaspoons of filling in the center, about the size of a small grape. Fold the bottom edges of the leaf up over the filling, then fold the sides in toward the center. Roll up tightly into a cigar shape.
7.Arrange the stuffed grape leaves in snug layers in the baking dish and pour 1 1/2 to 2 cups of water over the dolmathes, adding the remaining olive oil to the top.
8.Cover the dish and bake for about 1 hour. Let cool before serving with a dollop of Greek yogurt.
