Ingredients

50 -60 grape leaves ( fresh or packaged , blanched )
1/2 cup olive oil
4 green onions , finely chopped
1 cup long grain rice
2 tablespoons lemon juice ( fresh squeezed )
2 tablespoons dill ( finely chopped fresh )
2 tablespoons mint ( finely chopped fresh )
2 tablespoons parsley ( finely chopped fresh )
1 -2 teaspoon sea salt
1/2 teaspoon fresh ground pepper
1/2 cup water
1/3 cup olive oil
3 -4 cups water
Dolmathakia Stuffed Grape Leaves, also known as Dolmades, is a traditional Greek dish that is usually served as an appetizer. It's a popular dish throughout the Mediterranean region and is typically made with grape leaves and a rice-based stuffing. The stuffing varies depending on the region, but it may contain ground meat, onions, garlic, or vegetables. Instructions

1.Rinse the grape leaves in cold water and set aside.
2.In a saucepan, heat 1/2 cup of olive oil over medium heat.
3.Add the green onions and cook for a few minutes until soft.
4.Add the long grain rice and stir to coat.
5.Add 1/2 cup water, lemon juice, dill, mint, parsley, and salt and pepper to taste.
6.Bring to a boil, then reduce heat to low and simmer for 15 minutes or until rice is cooked and the water is absorbed. Remove from heat and let cool.
7.To assemble the dolmathakia, lay a grape leaf flat on a cutting board with the vein side up and the stem side facing you.
8.Place a tablespoon of the rice mixture on the leaf, near the stem.
9.Fold the bottom of the grape leaf up and over the filling, then fold in the sides, and roll up tightly like a cigar.
10.Repeat with the remaining grape leaves and filling until it's all used up.
11.Arrange the dolmathakia snugly in a deep casserole dish, seam side down.
12.Add 3-4 cups of water and 1/3 cup olive oil to the dish.
13.Cover the dish with a lid or foil and bake in the oven at 350°F for 45 minutes.
14.Remove from the oven and let it cool. Serve and enjoy!
