Ingredients

2 cups water
salt
1 cup long grain white rice ( or use long grain brown rice )
1/4 teaspoon cinnamon ( preferably fresh ground )
1 tablespoon sugar
1 tablespoon unsalted butter
1 lemon , zest and juice of ( about 2 tbls . juice )
1/4 cup dried currant ( or use raisins )
1/4 cup toasted pine nuts
black pepper ( or a 5 pepper mixture )
20 -25 grape leaves packed in brine
extra virgin olive oil

Instructions

1.In a pot, bring 2 cups of water and a pinch of salt to boil, then add the rice, cinnamon, sugar, butter, lemon zest and juice, currants/raisins, toasted pine nuts, and black pepper.
2.Reduce heat, cover the pot, and simmer for 18-20 minutes for white rice, 30-35 minutes for brown rice, or until rice is fully cooked.
3.Rinse the grape leaves under running water and drain them well. Cut off any stems from the leaves.
4.Spread the grape leaves on a flat surface, vein side up, and fill each leaf with a tablespoon of rice mixture.
5.Fold the bottom end of the leaf over the filling, then fold the two sides in toward the middle before rolling the leaf up tightly.
6.Arrange the stuffed grape leaves snugly in a pot, drizzle a little bit of olive oil over them, and pour enough water to cover them.
7.Cover the pot and bring the water to a boil. Then reduce the heat to low and simmer for 15-20 minutes or until the dolmas are tender.
8.Once cooked, let the dolmas cool for a few minutes before serving them at room temperature.
