Ingredients

1/4 cup olive oil
3 tablespoons olive oil
1 medium onion , chopped
3 cloves garlic , minced
1 cup long grain white rice
1 1/2 teaspoons cumin , ground
4 cups canned chicken broth
1/3 cup currants
1/3 cup pine nuts , toasted
1/3 cup fresh parsley , minced
1/4 cup of fresh mint , minced
1 jar grape leaves , drained
1 cup plain yogurt
1/4 cup of fresh mint , minced
1 clove garlic , minced

Dolmades are a Greek delicacy and are quite popular. They are a must-have appetizer at many events and restaurants. They are stuffed with rice, herbs, and pine nuts and rolled with grape leaves and slow-cooked in a broth. Pairing them with a refreshing yogurt sauce makes the perfect lunch option. It's healthy and filling, and not to mention yummy. These Dolmades with Yogurt-Mint Sauce can be a great treat for your taste buds.

Instructions

1.Heat 1/4 cup olive oil in a large frying pan over medium-high heat. Add onions and garlic, and sauté until they soften.
2.2. Add rice and cumin, and stir for 2 minutes. Add 2 cups of chicken broth and bring to a boil.
3.3. Reduce the heat to maintain a gentle simmer and cook, partially covered, until the rice is tender and most of the liquid has been absorbed, about 18 minutes.
4.4. Add the currants, pine nuts, parsley, mint, and salt, and stir well to combine.
5.5. Rinse the grape leaves under cold water and drain. Cut off the stems and arrange them vein side up on a work surface. Put a tablespoon of filling in the center of the grape leaf where the stem was, fold up the bottom, then the sides, and roll it up tightly. Repeat with the remaining grape leaves.
6.6. Arrange the dolmades, seam side down, in a large pot and pour in 2 cups of chicken broth to cover.
7.7. Bring to a boil over high heat. Reduce the heat and simmer gently until the dolmades are cooked through, about 45 minutes.
8.8. Meanwhile, mix together the yogurt, mint and garlic in a small bowl to make the sauce.
9.Serve the dolmades with the yogurt-mint sauce and lemon wedges.
