Ingredients

1 jar grape leaves ( I like Orlando brand )
olive oil or 4 tablespoons butter
lemon
Greek yogurt ( Fago brand if available )
4 cups chicken broth
2 lbs ground beef
1 -2 large onion , chopped
1 cup white rice
2 eggs
1 cup dried mint
2 tablespoons butter , softened
3/4 bunch fresh parsley , chopped
dill , according
3 -4 tablespoons lemon juice
salt , according
pepper , according
Dolmades are a traditional Greek dish that consists of stuffed grape leaves with a filling of either meat or rice and herbs. The use of grape leaves in cooking dates back to ancient times and it is believed that the Greeks adopted the technique from the Persians. Today, dolmades are a popular appetizer or main course that can be found in Greek and Mediterranean restaurants all over the world.

Instructions

1.Rinse grape leaves under cold water to remove excess salt, and set aside to drain.
2.In a large pan, sauté chopped onions until translucent, then add ground beef and cook until browned.
3.Add white rice, mint, parsley, dill, butter, lemon juice, salt and pepper to the meat mixture and stir until combined.
4.Take a grape leaf and lie it flat on a work surface, place a heaping teaspoon of meat mixture on the stem end of the leaf, fold in the sides, and tightly roll the leaf until the filling is covered.
5.Repeat the process until all the leaves and meat mixture are used up.
6.Place the stuffed grape leaves in a large pot and pack them tightly together, pour chicken broth over the grape leaves until they are covered, add olive oil or butter, and a whole lemon sliced in half.
7.Cover the pot and simmer for 45 minutes on low heat or until the liquid is absorbed.
8.Remove from heat and let the dolmades cool slightly before serving with Greek yogurt.
