Ingredients

2/3 cup raw rice
1 jar grape leaves
6 small onions , finely chopped
3/4 lb ground lamb or 3/4 lb ground beef , uncooked
1 teaspoon crushed dried mint
2 teaspoons finely chopped parsley
1 pinch cinnamon
1 teaspoon salt
pepper
2 tablespoons olive oil
chicken broth or water
2 lemons
2 egg yolks

Instructions

1.In a medium bowl, soak the rice in water for 10 minutes.

4.Rinse the grape leaves and pat them dry.

8.Repeat with the remaining grape leaves and meat and rice mixture.
9.In a large saucepan, arrange the stuffed grape leaves in a single layer.
10.Pour enough chicken broth or water over the grape leaves to cover them.
11.Place a small heatproof plate on top of the grape leaves to prevent them from floating.
12.Cover the saucepan and simmer over medium heat for 35-40 minutes.
13.Meanwhile, prepare the avgolemono sauce by whisking together the egg yolks and lemon juice in a small bowl.
14.Slowly stir in 1 cup of the hot broth from the saucepan.
15.Pour the avgolemono sauce over the grape leaves and return the saucepan to low heat.
16.Cook for an additional 5-10 minutes until the sauce thickens and coats the back of a spoon. Serve and enjoy!
