Ingredients

1 cup olive oil
3 large onions , chopped
1 teaspoon salt
1/4 teaspoon pepper
1 cup rice
1 teaspoon dill weed
1/2 cup chopped parsley
6 scallions , minced ( including green tops )
2 lemons
2 1/2 cups water
1 1/2 lbs grape leaves

Instructions

1.In a large skillet, heat olive oil over medium heat. Add onions, salt, and pepper and sauté until the onions are soft and translucent.
2.Add rice, dill, parsley, scallions, juice of one lemon, and 1 1/2 cups of water to the skillet. Bring to a boil, then reduce heat and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
3.Rinse the grape leaves thoroughly and trim off any tough stems. Boil the trimmed grape leaves in a large pot of salted water for 5 minutes until they soften. Remove from heat and rinse under cold water.
4.Preheat oven to 375°F.
5.Place a heaping tablespoon of the rice mixture in the center of each grape leaf. Fold the bottom of the leaf up over the filling, then fold in the sides and roll up tightly. Repeat until all the filling is used.
6.Arrange the dolmadakia seam-side down in a baking dish. Squeeze the juice of the second lemon over the dolmadakia and drizzle with olive oil.
7.Add 1 cup of water to the baking dish. Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 20 minutes or until the dolmadakia are heated through and slightly browned. Serve hot or at room temperature.
