The combination of rice, onion, and garlic with the spices and vegetables makes for a filling and nutritious meal. Dolma Dalya is often served during Ramadan, but it can also be enjoyed any time of the year as a hearty lunch or dinner option. It is also a perfect recipe for vegans and vegetarians, as it is meatless and gluten-free.

Instructions

.Rinse the grape leaves under cold water and set aside to drain.
.Cut the top off the red pepper and tomato, reserving both tops. Scoop out the flesh of the pepper and tomato and set aside in a bowl.
.In a separate large bowl, mix together the onion, garlic, rice, paprika, cinnamon, spice mix, olive oil, water, and salt and pepper until well combined.
.Take a grape leaf and place a tablespoon of the rice mixture in the center. Fold the sides of the leaf inward, then roll the leaf tightly from the bottom to the top. Repeat with the remaining grape leaves and rice mixture.
.Stuff each pepper and tomato one-third full with the remaining rice mixture and place into a large cooking pot. Arrange the stuffed grape leaves tightly and evenly around the peppers and tomatoes.
.Spread the cinnamon and minced garlic over the stuffed vegetables, then crumble the stock cube over the top. Pour in the water, cover, and bring to a boil. Lower the heat and simmer for 30 minutes.
.Once done, remove from heat and take off the pepper and tomato tops. Drizzle with lemon or lime juice and salt and pepper to taste.
.Serve hot and enjoy!
