Ingredients

2 zucchini ( each about 7 inches long )
2 potatoes ( each about 4 inches long )
1/2 lb ground beef or 1/2 lb lamb
2 tablespoons parsley , chopped , divided
2 tablespoons rice , uncooked
1 tablespoon onion , chopped
1 egg , beaten
1 1/2 teaspoons salt , divided
1/2 teaspoon black pepper , divided
1/2 teaspoon cinnamon
2 tablespoons oil
1/3 cup onion , chopped
1 lb lamb shank , in 4 pieces
3 cups water
1/2 cup chickpeas
1/4 teaspoon cinnamon
1 tablespoon lemon juice
Dolma is a Mediterranean dish that consists of vegetables filled with a spiced mixture of rice and meat. This Algerian version uses zucchini and potatoes as the vegetables, with ground beef or lamb as the protein source. The dish is then simmered in a flavorful broth with chickpeas and warming spices, resulting in a hearty and nourishing meal that is perfect for a cool evening. Instructions

1.Cut off the tops of the zucchini and potatoes and scoop out the insides with a spoon.
2.In a bowl, mix together the ground beef or lamb, half of the chopped parsley, rice, chopped onion, beaten egg, 1 teaspoon of salt, 1/4 teaspoon of black pepper, and cinnamon.
3.Stuff the mixture into the zucchini and potatoes, leaving a bit of room at the top.
4.In a pot, heat up the oil and sauté the remaining onion. Add in the lamb shanks and brown on all sides.
5.Add water, chickpeas, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and cinnamon. Bring to a boil.
6.Place the stuffed vegetables in the pot and top with the remaining parsley.
7.Cover and simmer on low for 45-50 minutes, or until the vegetables are tender. Drizzle lemon juice over the top before serving.
