1 teaspoon tabil ( Tabil - Traditional Tunisian Spice Mix )
1 teaspoon salt
1/2 teaspoon harissa
1 egg , beaten
fresh ground black pepper , to taste
30 rectangular phyllo pastry sheets ( approx 4.5-inchx6.5-inch )
sunflower oil or vegetable oil , for frying

Instructions

1.In a large bowl, mix together the shelled prawns, ricotta cheese, cilantro, preserved lemon, capers, tabil spice mix, salt, harissa, and black pepper until well combined.
2.Lay out one sheet of phyllo pastry on a clean work surface and brush with the beaten egg.
3.Place a spoonful of the filling on one end of the pastry sheet, leaving a small border.
4.Roll the pastry sheet around the filling, tucking in the edges to form a cylindrical shape.
5.Brush the end of the sheet with more egg wash to seal the roll.
6.Repeat with the remaining pastry sheets and filling.
7.Heat the oil in a frying pan over medium heat.
8.Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per side.
9.Drain on paper towels and serve hot.
