Ingredients

7 eggs , separate out yolks
3 egg yolks , additional
3 1/2 cups confectioners ' sugar
3/4 cup sifted all-purpose flour
1 tablespoon lemon juice
1/8 teaspoon salt
1/2 lb good quality semisweet chocolate or 1/2 lb bittersweet chocolate
1 cup butter
1 teaspoon vanilla extract
3 egg yolks
2 tablespoons confectioners ' sugar

Instructions

1.Preheat the oven to 375°F.
2.In a large bowl, use an electric mixer to beat the 7 egg yolks until thick and lemon colored.
3.Gradually add in ½ cup of confectioners’ sugar, continuing to beat until well combined.
4.In another bowl, sift together the flour and salt. Add into the egg yolk mixture and mix until just combined.
5.Beat the egg whites until stiff peaks form. Fold into the egg yolk mixture.
6.Spread the batter evenly on 7 greased and floured 8-inch cake pans.
7.Bake for 8 minutes or until done.
8.Repeat until all 7 layers are baked.
9.For the filling, melt the chocolate and vanilla extract in a double boiler.
10.In a separate bowl, beat 3 egg yolks and 2 tablespoons of confectioners’ sugar. Add into the chocolate mixture and stir until well combined.
11.In another bowl, cream the butter and 2 cups of confectioners’ sugar until well combined.
12.Add the chocolate mixture into the butter mixture and mix until well combined.
13.Spread the filling over each layer and stack the layers on top of each other.
14.Chill the cake for at least 2 hours before serving.
